Eurasian arrowhead sprouts distinctive, arrow-shaped leaves above shallow waters while submerged foliage remains ribbon-like and flexible. Three-petaled white flowers with rich purple centers bloom on upright stems through midsummer, attracting bees and hoverflies. Beneath the mud, fleshy starch-rich tubers anchor the plant and serve as vital winter forage for waterfowl.
